Cooking Chicken Taquitos at Home

Do y’all know about the taquitos at 7-11? I’ve had them before, and they’re pretty decent, but can we talk about the homemade taquitos my mom makes? Lord, I love them so much that I even eat them for breakfast. The texture of the flour tortilla, the flavor of the filling, and then the extra sauces put on top— oh my word! They were chicken taquitos, but obviously you can use a different kind of meat too. Lemme get into the process, shall I?

First things first, my mom seasoned the chicken with seasoning salt and pepper. She didn’t overdo it, because the spices would be used later on.  The recipe says that you can use rotisserie chicken, but we already had chicken screaming to be used in the fridge. Though while the chicken was cooking, she grated some cheddar cheese from a block. She didn’t use shredded cheese from a pack, because that contains more preservatives than freshly shredded cheese. Of course, shredded cheese from a pack is okay. Just be mindful of the preservatives.

After grating the cheese, that’s when all the spices were added. Chili powder, cumin, cilantro, cream cheese, and then the shredded chicken—oh my god, look at that filling! It all came together, Although, it won’t look the most appetizing until the whole thing is actually finished.

So with that said, my mother pulled out some flour tortillas and placed some filling into each one. Once the right amount of filling was used for each one, they had to be folded. Corn tortillas can be used to make taquitos, but they’ll be much harder. It’s a matter of preference, but I prefer flour tortillas by far.

After that was complete, it was time to cook them in a pan. The oil was already hot, so the taquitos cooked fast. You know they’re ready when there’s a golden-brown appearance. And with that, here is the finish result!

They’re good when eaten plain, but put some sour cream, taco sauce, and green salsa, and oh my lord! It’s so, so good! Having your favorite sauces on a taquito is a MUST! It makes them taste so much better and leaves you wanting more.

You can eat them with your hands like my mother does, but I prefer to eat them with a fork. Heading off to college, they will definitely be something I will miss. Upon my return home for break, I request that there be some taquitos made for me. Because honey, they’re so good that I need them in my life!
